While public events are not yet back to our full pre-COVID attendance, every familiar face brightens up our event, and together, we'll keep raising our spirits.

It turns out that you don’t need over a decade to create an award-winning whisky. Our 3-year-old Glenbow Single Malt whisky won silver medal at the World Whisky Awards and the Canadian Whisky Awards, demonstrating that innovative techniques and skillful craftsmanship can achieve exceptional quality and flavour.

Our relentless pursuit of a better whisky continues to this day, as we continue to push the bounds of what Canadian whisky can be.

8 Years ago Matt & Keith shook hands and made a promise. To create a craft distillery in Canmore, Alberta, that produced vodka, gin, and one day whisky. That day has arrived, and our whisky is now flowing across the province!

We offer quality small batch whiskies and artisan white spirits together with aged rums. Our products meet the highest standards and we have worked hard to be able to offer an exceptional and diverse spirits portfolio. We are proud to be able to offer something for everybody and aim to provide that sought after, unique product.

We raise a glass to Signal Hill and its place in history. Like our whisky, Signal Hill represents adventure, innovation and longevity. Canadian grains, Newfoundland water and a three-barrel aging approach deliver a complex flavour profile and a deep, rich amber colour; the nose – a delicate blend of honey, vanilla, dried fruit and a hint of spice.

Paradigm Spirits Co. was created by passionate craft spirit entrepreneurs with a vision to build a distillery within a fabulous destination location. We found our home at 100 Kellogg Lane in London, Ontario. We are a young craft distillery, having opened our doors in December of 2020.

The former Kellogg processing facility presented a unique opportunity to produce spirits using many of the same ingredients used in cereal production that are grown and harvested within our region.

That's where the story starts, and it's only just begun. 

Guided by his love for Uisge Beatha, the water of life, Graeme Macaloney, our ex-pat Scot founder and whisky maker, set out to create the finest single malt whisky in North America and perhaps the world. Driven by quality he focused his efforts on bringing together the industry’s best Scottish distillers, ingredients (great Canadian barley, select American & European oak) and the best equipment. Our team is passionate about what we’ve created and we can’t wait to share it with you.

The Last Straw Distillery story is about family and friends coming together to bring a crazy idea to life. How exactly did a group of people with no background in the food and beverage business - let alone in making spirits – build an award-winning distillery in Vaughan, Ontario? It’s a story of imagination, hard work, perseverance, and above all, love.
